Not sure about Vancouver but Banff Springs Hotel and Chateau Lake Louise will be really nice. They're both part of the Fairmont chain so check out their website:

Emerald Lake Lodge, it's just past Lake Louise near Field. There are several hotels in Lake Louise, the Chateau is the biggest, but it still has that romantic air about it.

banff..do a search on lodges
lake louise..one choice..and lousy food at this hotel
