Not true. Carole King has written lots of successful tunes, just think about You've Got a Friend and You Make Me Fell (Like a Natual Woman) and many more. Carly Simon won an Oscar (if I'm not mistaken) for her theme song to a James Bond movie. Alanis Morissette write all her songs. And there are many more (Joni Mitchell...). Or did I misunderstand? Maybe you meant classical music?

Since Dolly Parton was mentioned, I have to point out that she wrote I Will Always Love You, which is known as Whitney Houston's biggest hit. =)
But until the "feminist" movement, the opportunity to become a composer was just not available to women, just as it was not available to the poor. Classical era composers had to be fluent in several languages (since operas were written in French and Italian mostly and church music was written in Latin) in addition to all the musical theory. Plus they had to know how to play several musical instruments. They had to know how each one sounded well enough to place them in the score.
Folk songs (i.e. rock and roll of the day) were written and performed, sure, but they were not kept like classical. It was common in a non-television, non-internet world for people to know how to play one musical instrument to amuse themselves and their families.
