For the Norse... I would say Sigyn or Loki's wife, Loki is said to be bound to a rock in a cavern untill Ragnorok or the twilight of the gods... she stands by his side & catches the poisonous venom of the serpent that Skadi had placed over him to torment him. This is his Punishment for setting Hod's aim at Baldur with the dart of mistletoe....

edit... Odin's Eye was not plucked out by a raven! Odin gave his eye to Mimir at his well to have the oracular sight. To learn of Ragnarok, the death of Baldur etc... Odin hung on the great Yggdrasil for nine days & night with out food or water & pierced by his spear, to give us the runes & the 13 charms (Runismal-Havamal stanza's 138-165) The raven plucking out the eye thing must have been in a comic book or a movie or something, because alot of ill informed seem to think Odin's Eye was plucked out during his trial on the world tree. Odin does have 2 ravens Huginn & Muninn (Thought & Memory) But Odin gave his eye to Mimir's well...and then he took Mimirs Head...an oracular head is a good thing to have around, don't you think?

In Norse Mythology I like the story of Odin's self-sacrifice in order to bring the Runes to humans. Odin allowed himself to be hung upside down from the World Tree, and have his eye plucked out by a Raven just so that humans could have a written language and the power of the Runes available to them.

In Greek/Roman - Prometheus received eternal torment [he was chained to a rock and everyday his liver was eaten out by an eagle, and he would grow a new liver before the next day] just for his compassion for humans. He knew he was risking it all when he brough Fire to the human race.

All the gods have egos and can be vindictive. For the most compassionate, I'll choose Athena. Even though she was more than willing to lay the smacketh down when necessary, she was first and foremost the goddess of wisdom. As such, she would way out the sides before choosing. She was 1 of Zeus' favorites, but willing to risk his wrath when she believed she was doing right. She helped Hercules in his labors even though Zeus forbid it.
