YES provided the mains pressure in your area is good 2 bars is OK
I think there are specific laws concerning the fitting of pressure vessels,, you might have to have it fitted by a specialist who will give you a certificate to state that it was installed in accordance with the regulations.

Usually the cylinder is gravity fed from the cistern in the attic. If that is the case the pressure is determined by the vertical distance between the water level in the cistern to the tap. Unfortunately, the only way to increase the pressure is to increase the distance.
You can also check for blockage in the pipes.
Also, a problem I have had is when you get an air lock in the pipe between the cistern and the immersion. This can happen when the mains water supply is turned off due to maintenance or accidental damage. What people tend to do is continue using the water in the cistern to wash or flush toilets. If the cistern goes dry and you use the hot water taps, it creates an air lock after the mains pressure returns and the tank fills.
What I have to do is close the isolation valve, disconnect the pipe below the valve. Hold a bucket under the pipe, open the valve to bleed the air then put it all back together. Pain in the a ss.

Yes. An unvented cylinder is fed from the mains and instead of an open vent will have an expansion vessel and a blow-off safety valve fitted. The heated water will be at mains pressure at all outlets. You MAY have some leaks at connections or taps due to the higher pressure.
