Get some tapcons and attach 1" furing strips on 16" centers. If you want to insulate, you can add foamboard between the furring strips. Then, attach your wallboard to the furring strips and finish like you would in the house (tape and float the joints, then paint). The ceiling can be done by attaching the wallboard to your joists. Might add a blockout for a hatch that would allow access to the space, then you can add insulation on top of the wallboard through the hatch.

Now don't laugh but this really doe's work. I did my mothers bathroom in this and it can take the moisture and it is decorative. take tissue paper like u put in gift bags, u have to be patient this takes a little work, take sections of the wall to start with, smear paint on to wall wad up your tissue paper and then unwad it its like doing decopage, put it on the painted area and take your brush and go back over it to seal it to the wall. it will have a great effect and i think u will be happy with the result. it will look like a stucco effect but it is very attractive and different. good luck
