Ammonia gas is produced when heating an ammonium salt with a strong base.

The most common ammonium salt is ammonium nitrate: NH4NO3

Other common ones are ammonium sulfate, ammonium perchlorate and ammonium thiocyanate.

The reaction of Nitrate (NO3-) when heated with Al or Zn powder in the presence of a strong base, e.g. NaOH, also produces ammonia.

What about ammonium carbonate you don't even need to heat it it whiffs strongly of ammonia at normal teperatures. Ammonium halides will release ammonia on heating, but don't try it with the fluoride (HF is not nice).
