The term "Poker Face" literally came from the card game of poker where high amounts of money are usually bet on each hand, someone with a poker face can easily beat the rest by being able to fully hide his/her emotions that might betray if they have a good hand or are bluffing.

Someone with a poker face is hard to read, their face doesn't
reveal their emotions. In the game of poker, this is vital, as
the players try to read the "tells" of fellow players, meaning
they carefully the facial expressions and nervous gestures
of their fellow players to see if they are holding a good hand
or bluffing. A person with a poker face doesn't reveal much.
So if someone is saying that of you, that means they can't
figure you out easily.

when a person is called a "poker face," it means that the person doesn't "give away" his/her emotions or divulge anything through his/her expression. it's sort of similar when you say "unreadable." it comes from the game of poker. it's a strategy of not letting opponents know that you have good or bad cards, hence the term "poker face."
