If it is legal then what kind of notification must be given to all parties ?

Laws regarding recordings vary by state, and probably are not affected by the fact that it is a contract negotiation. Depending on your state, you may or may not be permitted to record a conversation with a party who does not know that he or she is being recorded. If you notify all parties that the conversation is being recorded, I'd expect the act of recording is then legal in any jurisdiction, but you should verify this under local law.

There may be two issues involved here. First is it legal to record a voice or Video conferencing? I think so so long as all parties agree to it and if I were you, I will have everybody sign off on it before hand.

Second is if your are taking about whether the conversation can be part of the legally enforceable contract, I think not. In general, they will have to be in writing

Just notify prior to arranging any conversations that you reserve all rights to record contract negotiations for legal documentation. That should cover you.
