Yes, one removed some 38 years ago. Life has stayed the same with no diet chages, Liquid in take can still be expelled by the remaining kidney. The worst was scar tissue causing chronic pain in the incision area.

I have two kidneys, but have recurrent bouts of kidney stones, so I would assume general healthy kidney care would be helpful. And that I do know something about...
At my doctor's advice, cut down on caffeine (or cut it out entirely if possible), drink lots and lots of water, exercise, take good care of yourself. Drink cranberry juice too! All of that helps to maintain healthy kidneys. Or kidney. :)
Alcohol dehydrates you just like caffeine, and dehydration is very hard on the kidneys and adrenal glands (located right on top of the kidneys, and controls metabolism). So again, cut down on alcohol and replace it with water, water, water!

If you know that you have one kidney...I'm sure you have a doctor. Ask the doc for a diet plan if need be.

If you were born that way- your body should already be compensating for it
If you have lost function of one- you might want to speak to a dietitian
