The taste is simply different because of the higher temperature. Your taste buds react to the hot temp and in turn send a different signal to the olfactory nerves in the CNS. It is really just a trick because your brain cannot recognize that the signal is coming from water just at a different temperature.

Bacteria and algae are able to thrive in room temperature water while most do not after boiling. This may change the taste. Also, some cities put more fluorine and chlorine in water than others. Ever had water with too much chlorine? Yuck.

It may be that the hot water motre easily dissolves metal in the pipes in your plumbing system. I was taught never to drink or use hot water for this reason. Even small amounts of metal can be harmful to humans and metal is very hard for the body to get rid of once it gets inside you. Lead was used as solderfor decades in plumbing systems so if the pipes are old make your habit of using hot water a thing of the past.

hot water will easily dissolve plastic linings in pvc pipes. It is best to boil ur cold water instead of having direct access to hot water thru the pipes. Aniway,it could also be due to different tastebuds.

Perhaps your hot-water comes in really long pipes. The hot-water picks up more nasty stuff from the pipes, than cold water. Hot- water is not really drinking water.
