My husband is Belizean and we've been married for over 20 years. I have often had Belizean food and am able to cook some of it as well. One of the quickest dishes is Panades. It is canned mackeral mixed with hot sauce salt and pepper, and placed inside of a corn meal dough. It is then fried until golden and served with onions in a vinegar sauce. It's good. I've also had cow foot soup, stewed chicken, beans and rice (called peas and rice) made with coconut milk, tamales, boil up, crab soup, and (idon't know how to spell it)esquivech or it's also called black soup. I like that too, it has boiled eggs covered in browned ground beef. I have never seen anything like that before. The way they make caramel cake is different too. I have also mastered that. But my all time favorite is conch, because it reminds me of lobster. I love conch stew.

Belize is a country on the north side of South America.
It was formerly called British Guiana or Dutch Guiana.
It would be a combination of British or Dutch style cooking and native cooking!

I have had Ox Tails and Rice with Fried Plantains(Bananas). I've also tried the Beef with the same sides. It's really good and nothing out of the ordinary. Try it! It's pretty good. Matter of fact, I think that's what I'll have for lunch tomorrow-thanks!
