Depends how you define sugar or what kind of sugar we're talking about. A potato is pretty much pure starch. The way you can tell is if you put iodine on a potato, it turns black. If you did it to an onion and looked at it under a microscope, you'd see little specs of black which are your starch molecules. So, the onion has a lot less starch. Starch is a polysaccharide made up of many many molecules of the simplest sugar, glucose. An onion has other sugars in it, like cellulose, however based on how much starch the potato has, i'd say the potato has more sugar.

im guessing ur lab is on reducing sugars or somthing like that.......well it depends, they both have sugar in them. But whichever produces a greater colour change will be the one with more sugar. In my experiment the onion had more sugar.

i would actually assume onions because thats why they caramelize when u saute or fry them.
