All milk starts out as part milk and part cream and the whole milk you buy at the store is about 4% cream. When you milk the cow and let the milk sit awhile the cream will rise to the top. In the old days the farmer’s wife would skim this off to whip up for treats for the family. Now the milk industry separates the milk from the cream to make skim or 1or 2% milk but they can use the cream for other products and the profits of the cream for these other products probably offset the expense of the separating procedure. Besides it there were different prices for the amount of cream in the milk most people would buy the cheapest as you can learn to like any of the percentages of milk if you like milk anyway. I have drank them all at one time on another graduating from whole down to skim and always liked the one that I was use to at the time but when you get to the skim milk for a while then I believe you will always like that one the best.

I would think it would be more expensive. Now I know nothing about the milk production industry, but I would think it would take more effort to make the milk skim or low-fat than full cream. Doesn't it come from the cow as full cream?

I would think that whole milk would be much cheaper, making low-fat or skim involves separating the fat from the milk.

I guess because the quality of milk is just as good whether it's whole, skim, or lowfat.
