You've had some really good answers. I would like to add
Avoid stimulants such as coffee, Colours which start E1--, cola, white sugar.
Ensure that you wear comfortable well fitting shoes which you have had for a little while and are used to them. Make sure they do not have a "rim" around them (like doc martins) as that increases your foot area and encourages you to mis-judge distance, steps etc.
Keep telling yourself that although you have been clumsy in the past, you are now elegant and graceful. (Even when you are falling over !) This really does make a difference, and we become what we tell ourselves we are.
If you are truly horrifically clumsy, (more than 5 incidents of clumsiness a day) get yourself tested for dispraxia. This is related to dislexia, but with your body co-ordination. If it turns out you are dispraxic, there are coping strategies in the same way as with dislexia.
Areyou a teenager? Do you go through phases where you are not clumsy, and then you have a few days where you fall up/down steps, walk into things, mis-judge plate sizes etc??? If so, this is really very normal in teenagers when they are growing. Worry less, relax, assure yourself this really is just a phase.

You just started your job...don't blame yourself if you are clumsy. Take it easy and be extremely polite to every colleague and patron. Even if you were to spill or break anything in the restaurant, who could bear to scold a sweet natured person?

James is right. Try to do everything twice as slowly as seems natural. It will not be as slow as it seems to you and you will do better. Also, this may sound weird, but try to keep a smile on your face all the time. The muscles that smile feed back into your brain and you will be less tense and nervous.

in my opinion, the only thing is to be calm and steady...always be alert when you are serving food to ppl, while you are walking and the most importantly is not to knock down anyone..=)

do things more slowly but don't come to a total stop, ha ha, it helped me to slow down a bit and concentrate more.
