For dramatic effect. A lot of sounds are exaggerated in the movies. When I pick up a kitchen knife at home it almost never sounds like I'm unsheathing a massive sword! Ha ha

Because knife and some of the razor cutting instruments given the "dangerous", "bloody" "outrageous", "hazardous", "intense", "painful", "piercing" awareness atmosphere by violin play in high chord sound to let you with pay attention and remember this is a horror or dangerous scenes! Beware~~~~~~~!

Psycho. Ever watched the Hitchcock film Psycho. It started there, since then every single director has copies this noise. Irritating, very irritating I think

that’s a grate question well it all starts back in the 1800's where you would draw your blade from you’re sheath made of rabbits intestine and it would always make a "SHEENNNG" noise and now this has been implemented in the movies

Just like background music, sometimes it's scarier than the on-screen action.
