At this point in my life, not only am I already an adult, but also continue to seek out and further my education for a myriad of reasons; to be able to work in fields that are more to my liking, to increase my knowledge in areas that I love but am lacking in, to be better prepared in situations that may warrant it, and to command a higher salary.

Oooo, in lotsa' ways.
It can force you to stretch out your boundaries (I thought I couldn't draw ears; conquer the fear of math and understand that junk; write and deliver an impromptu talk; communicate and confer with people I'd otherwise never approach or talk to; see the potential in myself others see), which means personal growth and maturation. This is invaluable, and worth school all by itself.
Also, when you learn the stuff put before you, it goes inside and mixes with what's already there. Then, if you're lucky, your views, perceptions, attitudes, beliefs, etc., are affected and you begin to notice your thought processes somewhat altered. I consider this all for the better. You'll always have free will and are not destined to follow new ideas, feelings.
The ability to think critically (not meaning negatively but in a more detailed, weighing-the-arguments way) is increased by the learning process (perhaps regardless of the subject), and THIS is also a stand-alone reason to get education.
Hmmm. Maybe I'll go back for that PhD after all...

What a question, it betters your job prospects, it enhances your social life, it makes it easier to have conversations about things that without education you would never know about. Ive just gone back to college at the age of 41 and am really enjoying every aspect of it

education can you change you a lot. Each year you go to school, you learn new things that will further increase your knowledge. And why is knowledge so important? well it's not just so you can get a good job, you can't take away a person's knowledge, it's very precious..
