If I left the ground with an air and water tight pan of room temperature water and, at 36,000 ft, took of the lid off, what would happen to the water?

It would freeze and you'd get some loss through sublimation/evaporation.

The temperature at 36,000 ft is -55 C or -67 F degrees.

The pressure is about 20% that of sea level so you'd get some loss as previously mentioned.

It would evaporate very quickly.
