That's a really tough question to answer in general; it all depends on what you value most (technical accuracy? passion? quality of tone?), and can also depend on the repertoire. I like Isaac Stern for Mozart, Hilary Hahn for Bach, Joshua Bell for Romantic works. Jascha Heifetz's name will always come up as a response to "the best violinist ever" (though I personally don't care for him), as well as Paganini.
