the esters on fruits actually give the odor of the fruit....
for example. nonyl caprylate is an ester coming form orange which gives the orange its characteristic odor. however, in some fruits there are more thatn 1 ester present thus the odor of the fruit will depend on the odor that was created by the combination of the odor of the ester mixture....
in some fruits there are other compounds that give their characteristic odor other than esters...

They're indistinguishable. In this country, NZ, there's an orange drink called Fanta which doesn't contain a drop of real orange But the only reason I know that is because a chemistry lecturer told me..
