For fall, I like an assortment of gourds and mini-pumpkins, with some silk fall leaves from your local crafts store.

Try an assortment of decorative spheres. Maybe try covering some Styrofoam balls with moss, grass, or wrap them with raffia or rope. Use them instead of the vegetation, and you can leave them in there for years to come.

Another option (though far more taxing to reproduce) would be to make a miniature scene within the cornucopia. Maybe something of the first thanksgiving, with the pilgrims and Native Americans. Good luck, though, as you'd have to be quite creative, but it'd be cool.

How about Wheat? You can have a bundle coming out I still would add sunflowers or maybe thistles, autumn leaves real or silk. If you make or know someone who makes wheat ornaments that would be different on the top.Or if you wanted to continue the wheat theme you could get a loaf of fake bread or even make just a flour and water loaf to set in

Gourds, a small pumpkin, fall-colored leaves. You can also add a ribbon to the cornucopia holder.
