By reacting with a carboxylic acid. H2O is also produced, so you add conc. H2SO4 to absorb the water, then you add a base like CaCO3 to precipitate the sulphate ions. I've carried out several different esterification reactions while teaching high school chemistry. With a few alcohols and organic acids you can make a wide range of flower and fruit aromas.
