after fermenting the grapes... it is distilled. the exent of the distillation will determine the proof of a wine. Scotch is the purest that is why it has the highest proof (and the best wine...). So if your trying to get brandy but then if you extend the distillation then you'll get wine of higher proof and not a brandy.....clear?

Proof is the percent of ethanol times two. Distillation increases the concentration of ethanol. What happens to proof?
