The Smart Bar, in the basement of the Metro (http://metromix.chicagotribune.com/barsandclubs/28433,0,1942555.venue) has been around for a zillion years. They don't open until late in the evening though
Subterranean(http://metromix.chicagotribune.com/barsandclubs/26364,0,1680412.venue) in Wicker Park has a lot of hip hop DJs during the week and on weekend.
There are a lot of other bars and clubs that feature hip hop on specific nights of the week. Pick up a Chicago Reader newspaper and run through the listings.

Studio 63 at 63rd and Harlem. It has all types of people and music. Wednesday night is Latin nite. Friday is $1 drinks, Saturdays is $3 martini night. I recommend the apple one it's delicious. They have a huge dance floor, plenty of servers ready to bring you the next drink. And a good DJ.

All of the answer you have recieved are great spots. I myself like the Twisted Spoke. Circus is a great place. You can pick up the Reader it is a local paper and has all of the places to see and check out. Very informative and has a very wide spectrum of places.
