I would go for hard maple. Things like marble, corian, etc. dull knives faster. Just be sure that you treat the wood with butcher block oil & try not to use the same cutting board for all of your foods. I have one of those hard plastic ones that I use ONLY for fish & chicken, that way I can bleach it really well.

Hard maple is best.
Cherry will work but you will have to replace it sooner.
Do not use oak for a cutting board it has a poisionous nature to food.
Or consider using one of the new antibacterial materials.

Maple and you can probably pick one up pre-glued and cut it down to size and route the edges. Caution what others tell you many woods like oak and ash turn black with mold when they get wet. That is why they are made from maple it doesn't. Look how many people said oak that's not right.

Make a retriever out of several layers of duct tape, folded wrong side out. Get some extra long BBQ tongs... See if you can push it to one end of the cabinets with a mop or broom, then retrieve from the end. Attach a notebook or other sturdy folded device to the end of your arm, and see if that won't do the trick. Use your imagination! If all else fails, go to granny's house, and borrow her...Grab-a-Can (trigger on one end, suction cups on the other, for retrieving cans in the cupboard; most grannies have one...)

Hard rock maple, that is what most of the large old butcher blocks that use to be used are made of. Use it to cup veggies and bread on only as the wood will absorb bacteria from meats.

The best wood for that is maple. As a substute you could use oak but be sure you sand it good and smoth. oak is bad to have splinters and if not finished good it can cause you lots of pain.

you should use a hardwood, like maple or oak. Oak works well, and cherry can be very pretty

Any fine grain hardwood would be fine. Try maple or cherry.
