I know people are answering quadpod but that is a portable four legged anchor. The reason it is a tripod is because it is actually more stable for 3 legs than 4 so you wouldn't really want one.
Another way to look at it is in terms of geometry. It takes three points to define a plane. In the case of something that has three legs, the three points are the bottoms of the legs. As long as the center of mass is over the plane these points define, it will be stable. The design of the tripod insures that the mass stays over the plane defined by the bottom of the legs.

Actually, tripods are three legged for a reason. They will not tip under normal circumstances. Much like the three legged milk maid's stool - why does she not use a four legged stool. The reason is purely geometry. Three points determine a plane, four points can determine a bunch of different planes.
You just don't put an 8 pound camera on a $15 tripod, it will break down.

Two-piece quadripod for cameras
Document Type and Number: United States Patent 4269499
Link to this Page: http://www.freepatentsonline.com/4269499.html
Abstract: The camera quadripod is formed of a pair of bipods, each having a pair of adjustable legs and each having a pair of arms which can embrace a camera. The pair of bipods cooperate together in conjunction with the camera body so that they become a quadripod and serve to support the camera. The adjustment of the legs controls the orientation of the camera. The bipods are small enough to be carried in the photographer's pocket when not in use, and are quickly and easily engaged on and removed from the camera body.

If it has four legs it is no longer a tripod - it is a "quadrapod".
