as a chiropractor I get asked this quite a lot and there is no definitive answer. unfortunately changing sleeping habits is one of the hardest things to do as obviously you are asleep! However the best advise currently is that if you tend to sleep on your side two slim to medium pillows can fill the gap between your shoulder and your head, however if you sleep on your back ideally one or no pillows as this prevents over flexing the neck. Importantly however is not to sleep on your stomach even without pillows as this causes over extension, i.e your head arching backward. This can cause really unpleasant neck pain.
In addition ( and you knew i was going to say this!) visiting a chiropractor wouldn't hurt as at least you would find out if it is just your sleeping habit and not anything underlying.

Use a body pillow to support belly and see if laying ur head on the body pillow as well(instead of using seperate pillows) will do any better for your neck. I found just using the body pillow for my belly and my head worked best instead of using body pillow for my belly and seperate pillows for my head. You can also try a throw pillow if regular ones don't do the trick,they are more stiff and smaller.Your problem might be being propped on your side at a certain angle and the softness of your regular pillows are throwing your neck off balance because your head is lying lower then the rest of your body. They also have neck pillows you can try. Try using a throw pillow to put under your neck or a neck pillow(rolled pillow) and your regular pillows. Its a process of elimination.If you have the funds to do so(wish I did lol) buy several different types of pillows and see which works best.Try a few one night then try some more another night and so on until you find the right combination. A good neck support pillow. I can recommend Pro-Pil-O which you can get from John Lewis. It made a huge difference to my husband's sleep; he snores less and feels far more awake in the mornings and no longer has neck pain in the morning too.

I have the same problem and quite often wake up with a headache too. Try using 1 flattish pillow, plump it up so it fills the hollow under your neck and flatter under your head so your top half is in alignment with your spine. This normally works for me. Good luck!

I had bad sleeping posture for years, found i was using too many pillows, now i just have one flattish pillow and find that i rarely get neck pain.

Chuck away your pillow and sleep on your back. You'll snore like hell but your neck will get better.

Youve got to work it. Stretch and hold exercises are the only way to be free. Your muscles should relax when you sleep.
