We don't exhale air. We exhale a different mix of N2, CO2, O2, and H2O, but the mass of the N2 remains the same. The CO2 is heavier than the O2 it replaces, reducing the ratio of N2 mass to total mass from 78% to 75%.

This assumes, of course, that the different ratios you were given are correct.

I don't know if the numbers you have are true, but certainly some N2 dissolves in the water and other components of of body, how much dissolved N2 is in urine, sweat, ect I don't know.
