If u mean by the "is" or "are" then it is "is" so the correct sentence is "A yoke of an egg is white"

Well, the last time I looked, the yolk was yellow/orange..but that is being picky, and I am not picky what so ever! And, not having read the answers, I am sure that others have pointed out the error of the original quesiton, regardless of the grammatic consequences. I would be more concerned about my color-blindness than I would be about my choice of verbs...but again, I am being picky. Hmmmmm
