My small answer to a very big question:
Compare the long takes in the Astaire-Rogers flicks ("Gay Divorcee," "Swing Time," etc.) to more contemporary efforts.
For special moments of dance, the little hoofing sequence in "Way Out West" with Laurel and Hardy is priceless, and let's not forget "Last Tango in Paris."

DIRTY DANCING, hands down! And the original one, not the Havana Nights one, that was lame. Anyone who can dance like Patrick Swayze and Jennifer Grey are more than welcome at my next party!!!!!!! I heart the dance at the end! "Nobody puts Baby in a corner!" You go, Johnny!
I also really enjoyed Center Stage. Really good movie, the underdog guy dancer who gets the girl in the end is soooo hot! Love them tights! Ha ha!!!

Just about anything of Fred Astaires, the man could glide.
Then again I liked:
"Strictly Ballroom"
"Dirty Dancing"
"Honey"
"Centre Stage"
"Shall We Dance"
I will stop right here.

Anything by Busby Berkley . . . very innovative
Just about any Fred Astaire or Gene Kelly movie . . . those me were true athletes and artists
Saturday Night Fever, Fame and Dirty Dancing . . . the created pop culture crazes in their time
Strictly Ballroom . . . great story, very funny and beautifully shot, I mean it was done by Baz Luhrman, so it was pretty and flashy and quirky
