If I sail to international waters, does that mean I can do whatever I like and not answer to any laws of any country?

No, because the ship you are on has a sovereignity as well. Not to mention the fact that there are mutually agreed upon maritime laws, and so on. Plus, Wherever you go, you are still a citizen of someplace. No, the only thing you could do is get some country to give you carte blanche and then diplomatic immunity.

You can't be legally taken into custody by any nation unless you're within their borders. Theoretically you can do anything you want as long as you never return within the borders of a country, uncluding their coastwaters. That's how L. Ron Hubbard managed to never pay taxes and have sex with underage boys all through his golden years.
