I'm just wondering in what possible circumstances a swordfish would come across drywall let alone decide to chew it.

No swordfish don't chew, they pierce. Plus dry wall becomes very soft and falls apart when it's wet. My Dad's a drywaller!

And the drywall actually gives it a robust flavor when you finally reel it in and prepare it for eating.
