It originally started with the Indians. The Aztec used corn as a symbol for life, since it was a means of survival. The first tamales were actually just corn dough, wrapped in the husk, later the meat was used. The husk is a representation of the treasure that can be found within. The treasure being the corn dough tamale. And yes they are GOOD!!!

Thank you for positive question about Mexicans. Its tradition in most households, before Thanksgiving--big family get together where dozens of tamales are made from chicken, beef and pork tamales. Usually there extra dough call masa made from corn for sweet tamales. The sweet ones are made with nuts, raisins, sugar and canale(flavored tea stick). Everyone contributes from getting the ingredients to wrapping the tamale.

I don't know about Christmas, but the part of Mexico where I spend Christmas a lot of years they always have pork tamales on New Years Day. Usually we have tamales with sugar, raisins and cinnamon in them (no meat of chili) too for desert
