Invent something new! What do you have a fascination about? Go with that.
To start, come up with a question you would like to answer and then your project is an attempt to answer the question. Some of the best projects I have seen are the ones where the student has tried to prove an old myth - like does birth order influence intelligence? Or does it matter which way you sleep (on stomach vs. on back) ? Or how bad is Coke for you?

Well why dont you do something like studying the stars and skies..... research the constellations in this month. Or you can do the phases of the moon and how they affect tides. Make a poster of the different phases. Show how the tides are affected by the magnetic forces of the moon on the earth.
Or do something on earthquakes. Build your own seismograph... explain how it works and why its so important. You can show how cities are trying to make buildings that withstand earthquakes. Like in LA.
Or...You could do a study of weather such as tornados and how they form and why... sort of a younger grade project but you can make it more your range by shjowing how tornadoes are measured.
I would research something you like and see what you think about it!!

I did a science project my 7th grade year on how a rainbow was made. Pretty simple. All I did was shine a light on a CD to make the "rainbow" took pictures, expained why this happened, stuff like that.

I did a project on the practice of mircochipping pets. That was an interesting topic, I learned quite a bit too.

oh i did this project called "the bed of nails" once. u have to find out y a ballon pops when it is pushed against one nail point up, but y it doesnt pop when u use many more nails. the concept is pretty simple and i won 3rd place =)
