Beer will work for the slugs, so long as they can fall in and not get out. Mine got smart and just learned how to drink the beer and make a clean get away. They are attracted to the yeast in the beer and they are supposed to drowned while trying to get it.
Salt also works well, but it can damage concrete, blacktop, and other materials.
I know you want organic, but there is a good snail and slug bait out there that is safe for animals, pets and the environment (it is in blue container I can't think of the name).

snails are easy, they are attracted to beer, take an empty plastic container (like the tub margarine comes in) and pour in 1/2 inch of beer. Dig a hole in the ground deep enough to set the container in, just until the top of it is level with the soil. It is a good idea to take another container to cover this one with (cut doorways into it to allow the snails, etc in). I learned this trick the hard way after a bunch of crows got into the beer and after getting drunk they attacked the neighborhood (yes people that is a true story). Anyway, different story, the snails, earwigs and slugs are all attracted to the beer, climb in and drown.

I'm not sure if this is a smart idea, but salt put around the plant in a wide circle should kill snails and slugs. Maybe if u water well inside the circle of salt away from the edges, salt water won't damage the plants.

I have heard of putting salt around your garden for snails, red pepper around your house for ants... I think there is a book out there called something like gardening naturally...Martha stewart had a show about this stuff you might want to go to her website and ask .

salt kills snails it will also kill the plants so just sprinkle table salt around the ground under the plants you want to keep them off of. not too much or when you will water it would be mostly saltwater just a little is enough.

Beer does the trick, use a sprayer and a cheap beer like bud or coors. One 12oz can should be enough depending on the size of your garden.

put beer in a saucer, i have heard this is a sure fire way to kill slugs, snails, etc. with out harming beneficial bugs or pets...good luck
