You can only sign up for with the voice that's the only one Yahoo! offers now.

If you are signing up for AIM, then download the software, go to properties in the File tab at the top of your buddy list, and you will be able to navigate to a place that says enable/disable features. There, you can uncheck a box that says "Enable Voice" and it will automatically prevent anyone from talking to you over their microphone, or you talking to them.
Generally, if you go to the properties section of any messaging service, there will be a place to turn voice to voice messaging off. Good luck!

Yeah, just get it WITH voice but don't use the voice component....that's what I do.
