Is this the turning or gravity on the earth, or just winds that create waves...?

wind, gravity (moon and sun), techtonic activity, storms, and even deep sea currents. The wind is the biggie, and its why you see them in the lakes too.

most waves and tides are caused by 3 factors, wind moving the surface of the water, the gavitional pull of the moon (and sun believe it or not) and the rotation of the earth.

Hi. Mostly wind. The wind pushes water into surface waves (non-breaking) and when they get to shallow water, they form the breaking wave that you see.
