There's a good book called "Starting Small: Teaching Tolerance in Preschool and the Early Grades" by Teaching Tolerance (A Project of the Southern Poverty Law Center). It has lots of examples of real-life ECE (Early Childhood Education) classrooms where diversity, tolerance and acceptance are practiced every day. There are many activities in the book that you could use with first-graders, but it really depends on the time you have to work with the students. Is it just one hour, one time? Or will you be doing half-hour lessons twice a week for three months? You can't really get into lesson planning until you have that information.

Nutrition--good nutrition--is on the minds of so many people today. Getting kids to eat well--snacks--is important. Discuss the 4 main food groups--grains, vegetables and fruit, dairy, and meat and alternatives. Find out their eating habits--likes and dislikes. Then (depending on the type of class) have them make English muffin pizzas--have a variety of ingredients already in plastic containers, grated skim milk mozzarella, and tomato sauce. The children go along the row of ingredients putting a choice of 3 (not including the sauce and cheese) on their muffins. At the end of the line they put their half muffin mini-pizza on a cookie sheet and you take it to the staff room or wherever there is an oven available and bake them until bubbly hot. Leave them out to cool slightly and then the children could have them for recess or as an extra treat at lunch. I have done this several times with grade ones. Get to kids through their stomachs and they will never forget! Hope that this will work out for you.
