Kazuhito Yamashita is an outstanding Japanese classical guitarist. Seiji Ozawa is one of the fine Maestros of the world, though I think he was born in the US.
Midori, as another said, is a fine violinist. There is also a guitar orchestra in Japan that is really good- the Nibori Ensemble.
