I want to replace the pictured tiles I have doted about in my kitchen and bathroom. As I don't want to replace all of the others can anyone tell me if there is a technique to chip out the ones you don't want when they are surrounded by tiles that you want to keep in place?

Take care, wack the tile you want to remove in the middle with a medium weight hammer, not to hard but enough to break it away using a small stone chistle chip away until the tile is gone. Finish tidying up with an 1" scraper. you will soon get the idea.
Job done.

You can by a grout removal tool from any home improvement store. It's a handle with a blade that has a gritty coating on it. Put duct tape over the tiles you don't want to get scratched and carefully scrape the grout from around the tiles you don't want with the tool. Once all the grout is removed, wedge a chisel or thick screwdriver under the tiles you want to pop out. Make sure you put a cloth under where the chisel/screwdriver lays on the neighboring tiles. Pry it out. Next scrape all the adhesive or thin set out of the space. Apply new adhesive with a slotted trowel press your new tile in. Regrout and you're set. If you hit the tiles you don't want with a hammer you'll risk damaging neighboring tiles or the wall behind and loosening other tiles.

YES get a pointed chisel put it in the center of the tile you don't like and hit it with a hammer to crack it then pry the pieces out carefully so you don't damage the others you can hit the tile several times if you need to the more cracked it is the easier it will come out.

Break the offending tiles with a hammer, make sure you hit them in the middle, and prise out the broken bits with an old screwdriver. Fit the new tiles in the space occupied by the old tiles, but make sure you use just enough adhesive to hold them in place otherwise they will be "Proud" Next day grout. This method does WORK I have used it in the past.

first drill the center out with a masonary drill so you can get a chisel behind it then carefully run the chisel inbetween the tile and the backing working from the center of the tile to the edgel
do this in all directions the tile will come away
it is easyif the tiles were fixed with adhesive
