The very best thing to do when you first hit Vegas is get a "What's On" magazine. Most of the hotels provide them free of charge. They have extensive coverage of everything to do in the area from clubs to restaurants. Then you can decide for yourself what sounds best. My personal favorite is 3950 at Mandalay Bay. The food and ambiance are amazing. I'd also like to add my two cents about the Eiffel Tower Restaurant, which was mentioned in a previous response. It's simple...don't go there! I worked at the Paris for a fair amount of time, and in my position I had to deal with their employees quite often. I also ate their twice. You see, the hotel does not own the restaurant. They just lease the space. And since they are in essence their own entity with no obligation to the hotel or their guests, the employees are rude, unhelpful and the food really isn't as good as it should be for the price. Bottom line: if you want French food in Vegas, go across the street to Bellagio and make reservations at Picasso.

Yes, Pomplemousse (French for "grapefruit) has a wonderful view and the food is quite good. But I'll also say it's a bit stuffy. Make sure you reserve a table by the window well in advance.

On my last trip, I ate at SW in the new Wynn Casino. Phenomenal food and located on one of Wynn's manmade lakes. It's a remarkabley tranquil setting and very dramatic. If you can get an outdoor table, next to the water, I recommend it highly. At night, short shows occur on the water feature every hour or so. Really unique and a little less old-school than Pomplemousse.

This restaurant is actually just a bit off the strip, and consistently gets high ratings. The food is fantastic, and the atmosphere is very homey. It's not even like being in Vegas.

On the other hand, depending on your own tastes. My favorite restaurant for taking a date is the Prime Steakhouse in the Bellagio. It is impressive on most every level and I love the atmosphere. Pricey though.
