Lately when I've looked through online job listings I've seen jobs with the term 'T-OT' in it, ie- 'T-OT Office Assistant'. What does 'T-OT' mean?

Temporary with Overtime. You have no job security and will be expected to work long hours on occasion. Additionally, you may or may not be paid extra for long hours if they keep your weekly hours below a certain level.

Interview with them anyway, and ask what their conditions are for paying overtime wages. If nothing else it will be good interviewing practice.

I don't know exactly.

I think it means TIME and OVERTIME, indicating that this is an hourly job that may not be full time. Overtime is a requirement when requested by management.
