In high-end construction of homes, they used to do ceilings of stretched canvas, which was attached to furring at the top of the walls (not glued to a firm ceiling.) This provided a perfectly smooth surface that took paint very well. It was easier and cheaper than plastering the ceiling, and it made for a quieter room. I lived in a house with canvas ceilings. It was built in 1928, and the canvas ceilings were still perfect in the 1990's.

In the 1960's, suspended ceilings became popular. They have a metal grid into which plastic or fiber-board panels are fitted. They are good for lowering a too-high or damaged ceiling and for hiding plumbing and wiring. Some types of panels also provide sound dampening.

I don't know when they started just that it was some time in the 1900's. A false ceiling was put in over the high ceiling so that there wasn't as much room for the heat to rise to. It used to cost an awful lot to have a high ceiling just because heat does rise. also you could hardly ever keep your house warm.
