I don't plan to play games, but I want my computer to be fast. Do graphics cards only help with actual graphics processing like 3D models in games? Will a graphics card with 128 or 256 MB of video memory make the computer faster with respect to (1) general computing, MS Word, Internet Explorer, etc. and (2) video editing?
By video editing, I don't mean making graphics or anything, I just mean taking home movies and editing clips together in a way that makes sense.

I am already planning on getting plenty of regular RAM - like 2GB. I want to know if video memory will make it even better, or if (for the things I'm doing) regular RAM is the only way to make it faster.

Yes, a graphics card will make your machine run faster.
The monitor plugs directly into the graphics card so ANY image on the screen is generated with help from the graphics card. The card is a parallel processor (actually a set of them). It takes part of the load off the main processor, and its memory is dedicated memory that frees up your main memory. So it makes your machine run in a more optimized fashion (usually that means faster by being more efficient).
By Graphics I mean ANY images on the screen that isn't just text in the default font. If you look at this page, then it is every icon, all the text in different fonts, the hot links etc.
A 128 Mb card is decent for gamers (more memory is better as is the fastest processor), but you need a decent one to do anything on your computer. If you have a more effective Video Card then you can do more. It also helps to set the limit on how large of a media player screen you use. If you do video editing on your computer then you need a good graphics card. If you don't have one then the image will slow down and become more pixilated.

A good video card with the right drivers loaded will make a computer seem faster. It doesn't actually speed up the computer but it will make anything to do with the display faster. This includes refreshing pages in a word processor and even looking at digital photos on your computer.
In your case, a good display card will help with the simple video editing you're doing. It will allow the video to be updated more quickly and make scrolling smoother.
I recommend a display card with at least 128 MB of RAM; 256 MB is better if you can afford it.

A graphics card will speed up the visual reaction of the computer. For what you mention, You will want to add RAM to your computer. if you take your model name and number to a good store like Best Buy or Staples, they can tell you what you can use. The more RAM you have, the faster you will process, and the more stuff you can work on at a time.

Well if you buy a decent one, your RAM is freed up and goes to the card, so the PC will be much more responsive...then again, i only play games and it makes a HUGE difference.
