Classical always works. It's mellow and it blends really well while still providing nice atmosphere.

If you go classical, I'd suggest finding String Quartets pieces. Collections are pretty easy to find and are inexpensive. They also have a much more limited dynamic range than full orchestral classical, therefore the volume will remain pretty static and provide atmosphere.

The Emerson Quartet is fantastic and has several good recordings, but any collection will do.

As far as composers, Haydn, Mozart, Beethoven, Schubert and Mendelssohn are beautiful and perfect for atmosphere.

Also, if you are searching for quartets you are likely to come across a lot of recordings by the Kronos Quartet. They are awesome, HOWEVER, most of their recordings are relatively avant garde and probably not the best for a dinner party.

Depending on your age and the age of your guests, I find that jazz music works best. If you have something by Dave Brubeck, Miles Davis, or even Frank Sinatra. Put them all in and hit random on your stereo. Play it louder when you serve drinks before the meal and lower when the meal is served.
