I used to use the sauces on my steak: Heinz 57 steak sauce was my preference. I learned to season my meat with coriander, cumin seed, red/white/green/black pepper. I put the seeds in the with the peppercorns and grind them out of the same pepper mill.
When I feel ambitious I will roast the seasoning on the grill (using tin foil) before loading the mill. Good.
