Cells have different functions, and their shapes and arrangement are adaptations.
For example, blood cells contain some chemicals which other cell types do not. It is part of their function. That explains its shape.
Also, muscle cells are arranged in a certain manner so that their structure is optimally utilised for its functions.
Certain shapes denotes certain cell types. For example, if its shaped in a stellate manner, it is likely to be a nerve cell. if its a bi-concave disc, then its probably a red blood cell. if you can notice crescent-shaped dark portions in a huge round cell, then its probably a white blood cell.

It started when Pateur discoverred that there were "Right-Handed" and "Left-Handed" molecules that were oriented that way in space (the air). Then Dr. Jonas Salk used this information to discover a vaccination against Polio. And the discoveries continue to be made because of Louis Pasteur.
