With Window XP, you can click Start - All Programs - Start up and then right click on what you don't want there.
Another thing to do is to run msconfig.exe and disable all the start up items on the start up tab.

Just right click on the program name on your start menu and select remove from list

Go to my computer add and deltet programs, or simply right click on the item in the start menu and select remove from list.

if you mean ....you wanna add or delete items in startup!
then theres the way...

1>goto C:(or any drive tht has Windows)
2 now *document and settings*
3>user(like Joe-computer*)
4>startmenu
5>program
6>startup
make your changes out there add or remove programs

if you mean make changes in startmenu items...
procedure is almost same
you can do it in ....

document setting>> user +all user>>

now if you observe closely then you would find the file-folder sturcture tht you found earlier in *startmenu* is here as well
make changes........whtever you wish to and ofcourse you can delete or add folder over here tht wld start show on your startmenu too...
suppose you dont want tht *recent document* they just delete it from ...document setting>>User>>*(recent document)

this solve all your problem!!
