Gastronomy in mexico is huge. It depends on the zone for the North is rich in meats and beef, burritos and txan-like food is popular, in the Coastal regions seafood is excellent, and the center is rich in fruits and vegetables.
I strongly recomend try real tacos and quesadillas (both are eaten in flour o corn tortillas... but soft!), molletes, tortas (kind of subs), let me know what kind of food you like I'll tell yoy the best treats you might try!

tortillas! corn (in tortillas) is one of the most important staple foods in the mexican culture.
u eat EVERYTHING with tortillas. you eat quesadillas, tacos, nachos, u use the corn husks to make tamales, u can make corn chips (chips for guacamole dip), tostadas, enchiladas, atole, chilaquiles, flautas, and bunch of other foods. all of these delicious foods use tortillas.
