"Liquid crystal" refers to the center of each pixel in the screen, which is formed by suspending a layer of liquid crystal betwen electrodes and light filters. Liquid crystals are a very unusual phase of matter, where the substance can flow like a liquid, but has a crystalline structure typically seen only in solids. "Display" simply refers to the fact that the device is a display screen.

Most solid matter will arrange themselves in a neatly organize structure, in a matrix form. This is what is called a crystal. Normally, liquids are rust a jumble of molecules, randomly moving around, but some liquid organic compounds have the unusual property of arranging themselves in neat rows when the condition are right. In the case of LCD, the right condition is a small electrical field. Put a voltage across and all the molecules align themselves along one direction, just like a bunch of soldiers snapping to attention when the general steps in.
Some liquid crystal compounds have the property of changing the plane of polarization of light going through them, and that is how LCD work. A polaroid filter makes the light polarized in one direction, the liquid crystal twists that plane or not depending if you want a clear or a dark pixel, and another polaroid filter finishes the work; any light that has been rotated will be stopped by the second filter (small calculator and watch display use only one filter, the light goes to the back of the display on a tiny mirrored surface, and the polarized filter in the front does double work).
For full color LCD display, a small colored filter makes what would otherwise be white light red, green or blue.

A liquid crystal display (LCD) is a thin, flat display device made up of any number of color or monochrome pixels arrayed in front of a light source or reflector. It is prized by engineers because it uses very small amounts of electric power, and is therefore suitable for use in battery-powered electronic devices.
Each pixel consists of a layer of liquid crystal molecules suspended between two transparent electrodes, and two polarizing filters, the axes of polarity of which are perpendicular to each other. Without the liquid crystals between them, light passing through one would be blocked by the other.
Before applying an electrical charge, the liquid crystal molecules are in a relaxed state. Charges on the molecules cause these molecules to align themselves with microscopic grooves on the electrodes. The grooves on the two electrodes are perpendicular, so the molecules arrange themselves in a helical structure, or twist (the "crystal"). Light passing through one filter is rotated as it passes through the liquid crystal, allowing it to pass through the second polarized filter. Half of the light is absorbed by the first polarizing filter, but otherwise the entire assembly is transparent
