I though that was his teeth or something, I didn't think it was his tongue, or if it was, maybe the Blair witch lured the others in using Josh as bait, Josh may of been dead already

It was the Blair Witch imitating his voice. She has no voice of her own. That's the point of the Blair Witch. You can't trust yourself because she can make you do whatever she wants.

I'm pretty sure that it was his finger and some teeth. Never heard anyone referring to it as a tounge.
That would explain why he could still shout for help!
